Mexican Beef and Beans for Soft Tacos


Enjoy this spicy blend of beef and beans for making delicious soft tacos

This is a quick and easy dish that is easy to cook up in a skillet. It will help to freeze the beef first, to make it easier to thinly slice. Marinate for a couple of hours or overnight for a strong taste in Worcestershire sauce, ground black pepper, and a little chili powder.

Serve with warm soft flour or corn tortillas. You can also make them burrito-style and bake for a crispier outside.

Mexican Beef and Beans for Soft Tacos
Serves 4

3/4 pound beef round steak
1 can ranch or kidney beans
1 can garbanzo beans, drained
½ medium onion, diced
¾ cup picante sauce
3 Tablespoons chili powder
1 teaspoon cumin
Grated cheese for topping

Cook the thin beef slices and set aside. Saute onions, add ranch and garbanzo beans, add picante, chili powder, and cumin. Return beef to skillet and cook until some liquid has reduced.

Heat tortillas in microwave: wrap 3-4 in damp paper towel and set on high for one minute.

Serve immediately. Can also be made ahead of time and re-heated in skillet or in a wok.
