Mexican Summer Fruit Drinks


Enjoy these refreshing fruit drinks, Mexican style

Licuado de Melon
(4 servings)

1 watermelon
4 cups cold water
Juice from 2 limes
Honey

Quarter the watermelon and cut into chunks. Remove all seeds. Add chunks and cold water in a large bowl and leave for about 10 minutes. Transfer to a sieve (in portions) and press liquid from the fruit. Add lime juice to extracted liquid and add just enough honey to sweeten the flavor.

Peach and Mango Margarita
(4 servings)

2 mangoes (peeled and sliced)
3 peaches (peeled and sliced)
½ cup Tequila
¼ cup triple sec
¼ cup lime juice
10 ice cubes, crushed

In a blender, process the peeled and sliced mangoes and peaches. Puree until smooth. Add tequila, triple sec, and lime juice. Continue blending and add ice. Pulse until the mixture thickens. Serve cold or place in freezer for a few minutes for a frostier drink.
