Enjoy this delicious Mexican egg dish
If you want to create an easy egg casserole, this Mexican dish is just the answer. You can size it to serve as many people as you like; this one will provide 4-6 servings.
1 jalapeno, minced
(seeded if desired)
Heat small amount of cooking oil in a skillet. Add jalapeno, onion, and bell pepper and sauté for about 4 minutes.
In a bowl, whisk the eggs, egg whites, water, and salt. Tear the tortillas into small pieces and mix in. Add the sautéed vegetables.
Using the same skillet, heat more oil and add the egg mixture. Scramble for about two minutes, but they should not be completely done. Take skillet off heat and add tomatoes and cheese.
Preheat the oven
to 400 degrees F. Coat a casserole dish with cooking spray. Add the
scrambled mixture and bake for about 30 minutes. Serve with salsa and
top with avocado and sour cream if desired.
