Easy and Fast Chicken and Macaroni Dinner


If you're in a hurry, this recipe will save time and please your family as well

When you're in a rush, it's hard to find the perfect one-meal dish for your family. It includes all the favorite foods with a few healthy carrots and celery bites added. This recipe can be easily cut in half to serve just two. You may want to make a larger batch at one time, bake and freeze.

Easy Chicken and Macaroni Dinner
(Serves approximately 4)

2 boneless, skinless whole chicken breasts, pre-cooked
2 cups small elbow macaroni (before cooking)
2 medium carrots, sliced in thin medallions
2 medium celery stalks, diced
½ medium onion, diced
2 chicken-flavored bouillon cubes
2 cans (8-ounce) cream-style corn
1 ½ cups shredded Monterey Jack cheese (divided use)
4 Tablespoons milk
2 teaspoon parsley flakes
Seasonings as desired (i.e., pepper, salt)

Cook macaroni per package instructions. During the last four minutes of cooking, add carrots, celery, onion, and bouillon. Drain when done. In a large bowl, combine cooked mixture, corn, chicken, parsley, and three-quarters of the cheese. Toss well and pour into lightly oiled (cooking spray) casserole dish. Pre-heat oven to 350 degrees and back for about 45 minutes.
