When you need a heart-warming recipe, try this delicious lentil and tomato soup
Lentils take much less time to prepare than their legume cousins, which makes this a great last-minute soup recipe to prepare. Cook the lentils for no more than 15 minutes as they may get mushy.
Bring the other ingredients to a boil first, then add the lentils and let simmer until done. You can use any lentils you may have in the pantry, such as yellow or red lentils, but the most readily available are brown lentils on grocery shelves. If you have access to an ethnic market, be sure to take advantage of the other lentil types to enjoy a wide range of flavors.
Lentil Soup with
Spicy Tomato Juice
1 medium onion,
In a pot, combine onion, garlic, tomato juice, chili powder, and water. Cover and bring to a boil. Add diced tomatoes and green chiles and simmer for about 20 minutes. Add corn and lentils and cook for ten minutes, then add zucchini to finish (about 5 more minutes). Do not overcook. Serve hot and topped with fresh grated parmesan.
Feel free to spice it up even more with a sliced jalapeno. You can add the jalapeno whole for the flavor and then remove it before serving if you wish.
