Patricia's Taco Soup for a Crowd

Cooking for a crowd doesn't have to be time-consuming. This taco soup recipe is filling and so tasty, everyone will be craving more. You can cut it in half for a family meal, but it freezes well, so go ahead and make up a batch. You'll have it all ready for thawing on those days when you "just don't know what's for dinner."

Serve with a dollop of sour cream, some sliced green onions, and corn chips on the side if desired. There's no way you can mess it up. In fact, we think you'll be coming up with your own variations, too!

Patricia's Taco Soup for a Crowd

-2 lbs. lean hamburger or ground sirloin
-2 cans white hominy (drained)
-2 cans golden hominy (drained)
-2 cans black beans*
-2 cans dark red kidney beans*
-2 cans diced tomatoes*
-2 jars (4 oz. ea.) sliced pimientos
-2 cans (4 oz.) chopped green chiles
-2 pkgs. taco seasoning mix*
-2 pkgs. ranch dressing mix (one package may be sufficient)*

Notes:
--*(see end of page for no/reduced sodium substitutes)
--Can sizes are standard (15 oz/15.5 oz)


Preparation:
--Brown hamburger and drain well.
--Mix 2 pkgs. taco seasoning mix and 1 pkg. ranch dressing mix in a bowl.
--Place hamburger in a large stockpot and coat with dry mix.
--Add all other ingredients.
--Add water as needed to reach a liquid consistency (some will cook off). Continue adding as desired through the first part of simmering.
--Simmer on low-medium for 2 hours on the stovetop or in a slow cooker (7 quart size is perfect for this batch).

Salt substitutions:

-Prepare 1/2 lb. dry black beans from scratch (follow package directions)
-Prepare 1/2 lb. kidney beans from scratch
-Use "no sodium added" diced tomatoes
-Make no-salt taco seasoning mix:
--1 Tbs. flour
--2 tsp. chili powder
--1 tsp. paprika
--1/2 tsp. cumin
--1/4 tsp. cayenne
--1/4 tsp. garlic powder
--1/8 tsp. oregano
Combine thoroughly - this is the equivalent of one packet (double ingredients for above recipe)

-Make no-salt ranch dressing mix:
--1 teaspoon dried parsley
--3/4 teaspoon ground black pepper
--1/2 teaspoon garlic powder
--1/4 teaspoon onion powder
--1/4 tablespoon oregano
--1/8 teaspoon dried thyme
Add all in a plastic container, close lid, and shake thoroughly to blend. This is the approximate equivalent of one packet.
