Skillet Turkey with Pasta


Leftover turkey will taste great in this easy to prepare pasta-skillet dish

This is an easy to make skillet pasta dish that will taste great with the addition of leftover turkey (or chicken). Just throw it together, simmer until the pasta is done and serve. Can also make a day ahead and reheat. Other pastas can be substitute for the vermicelli.

Skillet Turkey with Pasta
(Serves approximately 6)

2 large onions, chopped
1 jalapeno, chopped or cut into strips (optional)
2 garlic cloves
¼ cup vegetable oil
10 ounces vermicelli (break into pieces)
1 can (16 oz.) diced tomatoes
1 can (14 oz) reduced sodium chicken broth
2 cups diced turkey (can substitute chicken)
¾ cup picante sauce
1 teaspoon cumin
½ cup Cheddar cheese (shredded)
¼ cup fresh, chopped cilantro (optional)

In a large skillet, sauté onion, jalapeno, and garlic in oil for 2-3 minutes. Add pasta and stir for 2 more minutes. Add tomatoes, broth, turkey, picante sauce, and cumin. Add cilantro and simmer for about 5 minutes or until pasta is tender and very little liquid is left. When serving, top with cheese.
