Sponge Cake with Amaretto Cheese Filling

This sponge cake recipe is as much fun to make and present as it is to eat

This recipe takes a plain old sponge cake recipe and dresses it up with an amaretto cheese filling. Plus, you can add in-season fruits such as raspberries or strawberries and a little whipped cream to make an appealing presentation. Add a few sprigs of mint and swirl a little raspberry syrup on the plate and it's perfect!

Sponge Cake with Amaretto Cheese Filling

-4 eggs
-6 ounces confectioner's sugar
½ ounce vanilla extract
6 ounces flour, sifted
Raspberry syrup

Use a mixer at medium speed. Whip eggs and sugar for about 20 minutes - or until stiff peaks form. Add flour slowly, stirring by hand. Preheat oven to 300 degrees. Spread batter on lined cookie sheet (about ¼ inch thickness). Bake about 15 minutes. Let cool and cut into 3-inch circles. Soak in raspberry syrup.

Cheese Filling

-8 ounces mascarpone cheese
-5 ½ ounces cream cheese
-1/3 cup confectioner's sugar
-1 1/3 ounces Amaretto
-3/8 cup heavy cream

Combine mascarpone and cream cheeses, sugar, and Amaretto in a bowl. Mix at low speed. In a separate bowl whip cream to soft peaks and fold into cheese mix.

Place a cake circle on plate and add cheese fillings. Add another layer of cake, the filling, and a final cake layer. Drizzle with syrup and add raspberries (or any fruit of your choice).

Top with whipping cream and mint sprigs.
