Creme de Cassis Cheesecake

Take cheesecake to a new taste level with this crusted creme de cassis and white chocolate filling

Not only do you get the cheesecake and creme de cassis in this recipe, but you have a crust and a delicious topping, too! It's the ultimate blend of luscious flavors.

Creme de Cassis Cheesecake

-1/2 cup butter, unsalted
-2 cups finely ground vanilla wafers (butter cookies will work)
-1 ounce white chocolate grated
-1/4 cup sugar

Melt butter in a saucepan on low heat. Add vanilla wafers, white chocolate, and sugar. Remove from heat and stir well. In a 10-inch spring form pan, press the mixture across the bottom and up the sides.

-4 eight-ounce bricks cream cheese, softened
4 whole eggs (bring to room temperature)
3 ounces white chocolate, grated
3 Tablespoons creme de cassis
1 ¼ cup sugar
Salt (just a pinch)

In a large bowl, add cream cheese and sugar. Use a mixer on low speed to blend for about 2 minutes. Add creme de cassis and a pinch of salt. Continue mixing. Add eggs, one at a time, mixing in between. Add chocolate and mix thoroughly. Turn out onto crust. Preheat oven to 350 degrees and bake for about 40 minutes. Remove and let cool for 10 minutes, then add topping.

-2 cups sour cream
-¼ sugar
-1 Tablespoon almond extract

Combine all topping ingredients and spread on cheesecake.

Continue baking for an additional 10 minutes.

Let cool and refrigerate for at least four hours before serving.
