Beef Stew for a Crowd

This tasty beef stew is perfect for a crowd or for making ahead and freezing

Want a change from the typical chili feast? This Texas Beef Stew is fit for a crowd or great for making ahead and packing away in the freezer. You can spice it up with your choice of peppers - we typically use jalapenos.

Beef Stew for a Crowd
(approximately 14-16 servings)

2 pounds beef (your choice) trimmed and cut into small cubes
1 ½ cups salsa or diced tomatoes
1 ½ cup barbecue sauce
1 large onion, chopped
3 cans corn (15 oz.)
4 cans black beans (15 oz.)
4 cans garbanzo beans (16 oz.), drained and rinsed
4 jalapenos, quartered (optional or can be removed after cooking)
Enough water to fill pot


2 Tablespoons flour
4 Tablespoons chili powder
2 Tablespoons cilantro
1 Tablespoon paprika
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon cayenne pepper
1 cup water

In a large pot add a touch of oil and brown beef cubes. Combine seasoning and add along with 1 cup water. Stir until thickened. Add salsa/tomatoes, barbecue sauce, onion, jalapenos, and corn. Cover with water and let cook for 2-3 hours. Add beans and continue cooking at least 2 hours. Check meat for tenderness. Add more water if necessary.

Serve with thick breads or over rice. Is also terrific over baked potatoes or cornbread. Freezes well or can be made ahead of time for heating and serving the next day.
