How to Build Your Own Favorite Potato Salad

Everyone has a favorite potato salad recipe: Why not create your own?

Potato salad lovers seem to live in two camps: those who love it with more mayonnaise and those who simply must have the mustard. Then there are the required low-fat versions and recipes for those who think eggs, pickles, or onions get in the way. So, it can become very complicated when making potato salad for a party or large gathering.

There's not an easy solution, but sometimes it's fun to set up a "test" kitchen and make several different kinds. Here are some variations and recommendations plus a "base" from which to start. Now, it's a matter of tasting and adjusting in the right amounts. Be sure to write down the ingredients used as you go, in case you find an all-out winner. Also, label each one, so folks don't get mixed up and start complaining!

Basic Potato Salad Ingredients

2 pounds potatoes (approx. 8 servings)
-This is the equivalent of about 6 red potatoes
-Yukon Golds are also good
-Try a mix of the two in one salad

2 celery stalks, finely diced

Salt and Pepper to taste

3 Tablespoons pickle relish
-Dill relish or sweet relish or 1/3 cup chopped pickle

-Ratio of 4 tablespoons mustard/2 tablespoons mayonnaise

Mayonnaise based
-Ratio of 3 Tablespoons mayo/3 Tablespoons sour cream/2 tablespoons mustard
-Substitute fat-free or light for mayo/sour cream
-Substitute yogurt for sour cream


1 large egg, boiled and chopped
½ medium onion, coarsely chopped
¼ red bell pepper, chopped
1/2 cup bacon, prepared and chopped (or imitation bacon bits)
3 Tablespoons pimento, chopped
2 Tablespoons fresh cilantro, chopped
2 Jalapenos, finely chopped
1 Tablespoon horseradish
2 teaspoons sugar
2 teaspoons white wine vinegar
2 teaspoons chives, fresh, chopped
