Peanut Sauce Recipes for Satays

Peanut sauces are wonderful for satays or as a dipper for other meats

There are many ways to make a great peanut sauce for Oriental style dishes. They are Indonesian in origin, although Thai cookery has adopted the sauce.

Here are a few quick and easy recipes. Mix and match to achieve your own particular favorite.

Peanut Sauce #1

¼ cup smooth peanut butter
2 Tablespoons hoisin sauce
1 teaspoon Thai chili sauce
1 Tablespoon fish sauce
1 Tablespoon ketchup
¼ cup chicken broth

Combine all ingredients thoroughly and refrigerate or serve immediately. If cold, let come to room temperature before serving.

Peanut Sauce #2

6 Tablespoons chunky peanut butter
3 Tablespoons rice wine vinegar
3 Tablespoons reduced-sodium soy sauce
2 teaspoons grated gingerroot
1 clove garlic, minced
¼ teaspoon red pepper flakes
1 Tablespoon sesame oil
1 Tablespoon honey (to taste/optional)
Tabasco (to taste/optional)

Combine peanut butter, vinegar, soy sauce, gingerroot, garlic and pepper flakes. Use a blender or food processor to mix thoroughly. On slow speed, add honey and Tabasco if desired. Refrigerate up to three days. Let come to room temperature before serving.

Peanut Sauce #3

6 Tablespoons peanut butter
½ cup plain, non-fat yogurt
2 teaspoons sugar (or sugar substitute)
1 ½ teaspoon reduced sodium soy sauce
¼ teaspoon dark sesame oil
½ garlic clove, minced
¼ teaspoon crushed red pepper flakes

Blend all ingredients thoroughly and refrigerate. Bring to room temperature to serve. Makes about one cup.

Peanut Sauce #4

6 Tablespoons crunchy peanut butter
Chilies to taste (minced)
Juice from one lime
4 Tablespoons coconut milk

Blend or process all ingredients and serve or refrigerate.
